This product is an organic matcha raw material that complies with EU standards. It is cultivated and produced in the high mountain regions of China (at an altitude of 500 to 800 meters) using the highly regarded Yabukita variety of Japanese green tea, and processed through a dedicated matcha production process. Thanks to the significant temperature differences between day and night and year-round sunlight management, the tea leaves grow slowly. This results in fresh and tender tea leaves that are rich in amino acids and tea polyphenols, making them suitable for matcha raw material. During the cultivation stage, shading covers are used to promote the formation of aroma and umami components. In the manufacturing process, rapid enzyme deactivation is performed using a three-stage steam steaming machine, which preserves the main components such as chlorophyll and theanine, as well as the vibrant green color. Due to the non-rolling method, there is little off-flavor, and the characteristic seaweed-like aroma and mellow sweetness of matcha are prominent. After refining, ultra-fine grinding is carried out under low-temperature conditions to produce a uniform matcha powder with a particle size of over 800 mesh. This organic matcha raw material excels in solubility and suspension, making it suitable for a wide range of applications from daily consumption to commercial tea beverages.
